[Feature] Streamline enable/disable individual package functionality

Describe the Feature

Update to use the more streamlined enable/disable functionality. Similar to how it's set up in dbt_ad_reporting. This would require less configuration from the customer whenever they need to disable a particular platform, for example no longer having to disable each individual package under the models" section.
