Type of change

Non-breaking change (backwards compatible)

Why are we doing this?

Sonic & Monad were previously disabled due to RPC issues that are fixed now.

What did we do?

Enable Sonic Blaze Testnet, Sonic Mainnet & Monad Testnet (no mainnet yet).
Upgraded the @biconomy/gas-estimations package version
Raised the relayer funding amount for Sonic because it was not enough

How Has This Been Tested?

E2E tests
