Migrate cover platform to entity descriptions in Overkiz

Proposed change

Rewrite the current Overkiz platform to leverage entity descriptions. This will remove the additional classes and make it easier to support new covers and add exceptions.

Needs testing by quite some users, since this touches many devices. The main benefit that it will be much easier to fix specific cover implementations from now on.
